WINEMAKER NOTES

When we set out to make Layer Cake Bourbon Barrel Cabernet, our goal was to take advantage of the great flavor in both the spirit and the charred oak barrels to add further depth and complexity of flavor to our award-winning Cabernet Sauvignon.

We started the way we do with our traditional Cabernet Sauvignon, by finding great vineyards that allow us to make a rich, make a rich, delicious Cabernet Sauvignon that tastes like $50, but costs less than $20. We traveled across the best regions of California, eventually settling on two main vineyards; one in Sonoma County’s Alexander Valley and one in sunny Paso Robles. The diversity of these two vineyards allows us to make a final blend that expresses the concentration, complexity and richness Layer Cake fans have come to expect.

After traditional Aging in French Oak we allowed the Cabernet Sauvignon to age in old charred oak barrels from some America’s finest bourbon distilleries to impart additional layers of flavor and a bolder and more intense character to our Cabernet Sauvignon.

VINEYARD NOTES

Our vineyard in Alexander Valley is a classic example of the appellation; aromas and flavors of chocolate- covered cherries are typical to the area. Our vineyard has a section that is part of an ancient volcanic eruption of Mt. St. Helena that laid down multiple layers of ash and rock, giving the wine beautiful mineral characteristics. The cool air that pours in from the Pacific each afternoon allows us to leave the fruit hanging late in the season while maintaining acidity that is bright and fresh. In Paso Robles, our vineyard is on deep, sandy loam soils sprawling over rolling hills. The deep roots combined with long, warm days give the wine rich, dense black fruit aromas and mouth-filling flavors.

TASTING NOTES

This Bourbon Barrel Cabernet Sauvignon both truly expresses the depth and complexity of the grape as well as the additional vanilla, toasty oak influence of the bourbon and charred barrel that result from 3 months aging in these barrels. The result is a wine that is dense, rich, and jammed with scents of blackberry and vanilla and a long, mouth coating finish complimented by a hint of sweetness.
