What it is
Mount Gay Eclipse is a golden rum from Barbados, bottled at 80 proof (40% ABV). Mount Gay has been making rum on the island for more than three centuries, and Eclipse is its signature blend of column and pot still rums aged in oak. It is bright, smooth and versatile, equally good in a cocktail or over ice.

Serving and pairing
Mix it with ginger beer and lime, use it in a rum punch or daiquiri, or sip it on the rocks. Pairs with jerk chicken, coconut shrimp, grilled pineapple and banana desserts. Store the bottle upright in a cool, dark place, away from direct sunlight and heat.
